Chef Joshua Smith, the charcuterie mastermind behind Moody's Delicatessen and Provisions as well as New England Charcuterie, both of Waltham, MA, started his culinary journey in North Carolina before working and gaining culinary experience along the west coast, ultimaltey settling in the greater Boston area.

The 2014 Rising Star chef started New England Charcuterie in 2012 focusing on producing the finest cured meats recreating the Old World charm but using modern practices. Originally a 700 square foot facillity, New England Charcuterie has now expanded into a 10,000 square foot facility, producing thousands of pounds of charcuterie daily.

In late 2013, Smith opened Moody's Delicatessen and Provisions, focusing on providng the highest quality, locally source ingredients featuring his very own New England Charcuterie products. Smith has expanded on Moody's creating The Backroom, a chic restaurant and wine bar.

Having a restaurant focused around cured meats, is is critical to have the right culinary tools for slicing and serving product. Smith uses the Legend line of hand crank meat slicers, with a strong prefence for the small, yet capable, Legend 250. "Nothing works better to slice our meat thinner." Moody's even stocks a few Legend models at all times for their clients looking for the perfect tool to slice their charcuterie at home. In addition, the Legend 250 is a favorite of Smith's for offsite catering events both in the Boston and Napa areas.
